I made this salad at work for a cooking class and it went down pretty well. Very easy, good fresh ingredients is the key here.
- 1 Fennel
- 2 Apples
- 2 Carrots
- Large handful arugula
- 1/2 cup raisins
Finely slice the fennel, apples and carrots and mix all ingredients in a large mixing bowl. Have the following dressing ready made so that the acidity from the lemon will prevent the apples from browning.
- 6tbsp extra virgin olive oil
- 4tbsp brown sugar
- 1 lemon (zest and juice)
- Salt and pepper (to taste)
Save some of the fennel greens and give them a rough chop. Toss them in at the end for some extra anise zing and a nice splash of colour.
